Ingredients:

1 pound boneless, skinless chicken breasts

1 teaspoon chilli powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 small onion, diced

1 red bell pepper, diced

4-6 burrito-sized flour tortillas

1 can black beans, drained and rinsed

1 cup shredded cheese

Optional toppings: salsa, sour cream, avocado, cilantro

Instructions:

Preheat the oven to 375°F.

In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.

Season the chicken breasts with the spice mixture on both sides.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, or until browned and cooked through. Remove from the pan and shred with two forks.

In the same skillet, add the onion and red bell pepper and cook for 3-4 minutes, or until softened.
